  • 1 lb chicken breast, sliced into strips
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
  • Add the chicken strips to the skillet and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for 5-6 minutes or until the chicken is cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and sauté the sliced bell peppers and onion until they are tender and slightly charred, about 5-6 minutes. Remove from the skillet and set aside.
  • To assemble the fajita bowls, divide the cooked brown rice among 4 bowls. Top each bowl with the cooked chicken, sautéed bell peppers and onion, black beans, and corn kernels.
  • Drizzle each bowl with salsa and sprinkle with shredded cheddar cheese and chopped cilantro.
  • Serve the chicken fajita bowls with lime wedges on the side for squeezing over the top.
