Ingredients
- 1 cup of white rice
- 1 pound of chicken breast, diced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of paprika
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 cup of cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup of chopped cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Cook the white rice according to package instructions and set aside.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the diced chicken breast to the skillet and season with cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper. Cook for 5-7 minutes or until the chicken is cooked through.
- In a separate small saucepan, heat the black beans and corn over medium heat until warmed through.
- To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top with the seasoned chicken, black beans, corn, cherry tomatoes, avocado slices, and chopped cilantro.
