Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 small head of cabbage, thinly sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 6 cups chicken broth
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 green onions, thinly sliced (for garnish)
Instructions
- In a large pot, heat 1 tablespoon of oil over medium heat. Add the diced onion and cook until translucent, about 3 minutes.
- Add the minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink, about 5 minutes.
- Pour in the chicken broth and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for 15 minutes.
- Stir in the sliced cabbage and soy sauce, and continue to simmer for an additional 10 minutes, or until the cabbage is tender.
