Created by: Howcan Team
Ingredients
- 1 1/2 cups of long-grain white rice
- 3 cups of chicken broth
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 cups of broccoli florets
- 1 can (10.5 oz) of cream of chicken soup
- 1/2 cup of sour cream
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the chicken pieces to the skillet and cook until no longer pink, about 5-6 minutes. Season with salt and pepper to taste.
- Stir in the cooked rice, broccoli florets, cream of chicken soup, and sour cream until well combined. Transfer the mixture to the prepared baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool for a few minutes before serving. Enjoy!
