- 1 lb chicken breast, cooked and shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
- 1 tablespoon olive oil
Instructions
- In a large bowl, mix together 1 lb of cooked and shredded chicken breast, 1 can of black beans, 1 cup of cooked rice, 1 cup of shredded cheddar cheese, 1/2 cup of salsa, and 1/4 cup of chopped fresh cilantro.
- Lay out the 4 large flour tortillas and divide the chicken and bean mixture evenly among them, placing the mixture in the center of each tortilla.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes, or until golden brown and crispy.
