Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup soy sauce
- 1 cup white vinegar
- 1 cup water
- 1 head of garlic, minced
- 4 bay leaves
- 1 teaspoon whole peppercorns
- 3 tablespoons cooking oil
- 1 tablespoon brown sugar
Instructions
- In a large bowl, combine 1 cup soy sauce, 1 cup white vinegar, 1 cup water, minced garlic, bay leaves, and whole peppercorns.
- Add the chicken thighs to the marinade, making sure they are fully coated. Marinate for at least 30 minutes, or overnight for best results.
- In a large pan or pot, heat 3 tablespoons of cooking oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later.
- Sear the chicken thighs in the hot oil until browned on both sides, about 5 minutes per side.
- Pour the reserved marinade over the seared chicken. Add 1 tablespoon of brown sugar for a touch of sweetness.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for 30-40 minutes or until the chicken is tender and the sauce has thickened.
