Created by: Howcan Team
Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup soy sauce
- 1 cup white vinegar
- 1 cup water
- 1 head of garlic, minced
- 4 bay leaves
- 1 teaspoon whole peppercorns
- 3 tablespoons cooking oil
- 1 tablespoon brown sugar
Instructions
- In a large bowl, combine 1 cup soy sauce, 1 cup white vinegar, 1 cup water, minced garlic, bay leaves, and whole peppercorns.
- Add the chicken thighs to the marinade, making sure they are fully coated. Marinate for at least 30 minutes, or overnight for best results.
- In a large pan or pot, heat 3 tablespoons of cooking oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later.
- Sear the chicken thighs in the hot oil until browned on both sides, about 5 minutes per side.
- Pour the reserved marinade over the seared chicken. Add 1 tablespoon of brown sugar for a touch of sweetness.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for 30-40 minutes or until the chicken is tender and the sauce has thickened.
- Serve the extra garlic chicken adobo hot over steamed rice and enjoy!

The dish is known for its savory, tangy, and garlicky flavors, with the extra garlic adding a delightful punch. The recipe typically includes chicken marinated in a mixture of vinegar, soy sauce, garlic, and spices, then simmered to perfection. Renowned chefs like Amy Besa and Romy Dorotan have popularized this dish at their acclaimed restaurants in New York City, showcasing the diverse flavors of Filipino cuisine. While Chicken Adobo can be found in various regions of the Philippines, the best version is often said to be found in the homes of Filipino families, where each cook adds their own unique touch.
