  • Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
  • In a large skillet, cook the ground beef and onion over medium heat until the beef is no longer pink. Drain any excess grease.
  • Stir in the cream of mushroom soup, sour cream, and 1 cup of cheddar cheese. Season with salt and pepper to taste.
  • Spread the beef mixture evenly into the prepared baking dish.
  • Arrange the tater tots in a single layer on top of the beef mixture.
  • Bake in the preheated oven for 30 minutes.
  • Remove the casserole from the oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
  • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
