Ingredients
- 2 tablespoons of butter
- 1/2 cup of chopped onion
- 2 cloves of garlic, minced
- 10 ounces of frozen chopped spinach, thawed and drained
- 1/4 cup of all-purpose flour
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 1/2 cup of breadcrumbs
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x9 inch baking dish.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1/2 cup of chopped onion and cook until softened, about 5 minutes.
- Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Stir in the drained spinach and cook for 2-3 minutes, until heated through.
- Sprinkle 1/4 cup of all-purpose flour over the spinach mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in 1 cup of milk, stirring constantly until the mixture thickens.
- Stir in 1 cup of shredded cheddar cheese, 1/4 cup of grated Parmesan cheese, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of nutmeg. Cook until the cheese is melted and the mixture is smooth.
- Transfer the spinach mixture to the prepared baking dish and spread it out evenly.
- In a small bowl, combine 1/2 cup of breadcrumbs with 1/4 cup of grated Parmesan cheese. Sprinkle this mixture over the top of the spinach.
- Bake for 25-30 minutes, or until the casserole is hot and bubbly, and the top is golden brown.
