Ingredients
- 2 pounds of Yukon Gold potatoes, peeled and cut into chunks
- 1/2 cup of milk
- 1/4 cup of unsalted butter
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of shredded cheddar cheese
- 1 tablespoon of truffle oil
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Place the peeled and cut potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot. Add the butter, milk, Parmesan cheese, and cheddar cheese to the pot.
- Mash the potatoes with a potato masher until smooth and creamy. Add the truffle oil and season with salt and pepper to taste. Stir to combine.
- Transfer the mashed potatoes to a serving dish and garnish with chopped chives. Serve hot and enjoy!
