Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5 minutes. Drain and set aside.
  • In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour and cook for 1 minute.
  • Gradually whisk in 1 cup of milk and continue cooking until the mixture thickens, about 5 minutes.
  • Stir in 1/2 cup of cheddar cheese, 1/4 cup of Parmesan cheese, garlic powder, onion powder, salt, and pepper until the cheese is melted and the sauce is smooth.
  • Remove from heat and add the cooked cauliflower to the cheese sauce, stirring to coat the cauliflower evenly.
  • Transfer the cauliflower mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese and 1/4 cup of Parmesan cheese over the top. Then, sprinkle 1/4 cup of breadcrumbs over the cheese.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
