Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the potatoes and pierce them several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  • Remove the potatoes from the oven and let them cool for 5-10 minutes.
  • Cut each potato in half lengthwise and scoop out the flesh into a large bowl, leaving a thin shell of potato inside the skin.
  • Mash the potato flesh with sour cream, 3/4 cup of cheddar cheese, and half of the chopped chives. Season with salt and pepper to taste.
  • Spoon the mashed potato mixture back into the potato skins and sprinkle the remaining cheddar cheese on top.
  • Drizzle each potato with truffle oil and place them back in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with the remaining chopped chives and serve hot.
