Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  • Remove the potatoes from the oven and let them cool for a few minutes. Reduce the oven temperature to 350°F (175°C).
  • Cut each potato in half lengthwise and scoop out the flesh into a large bowl, leaving a thin shell of potato inside the skin.
  • Mash the potato flesh with sour cream, melted butter, salt, and black pepper. Stir in 3/4 cup of shredded cheddar cheese and 3 tablespoons of chopped chives.
  • Spoon the mixture back into the potato skins and sprinkle the remaining 1/4 cup of cheddar cheese on top of each potato.
  • Place the stuffed potatoes back on the baking sheet and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle the paprika and remaining chopped chives over the potatoes before serving.
