Ingredients
- 4 large russet potatoes
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).

- Increase the oven temperature to 450°F (230°C).
- Place the potato skins back on the baking sheet and sprinkle with salt and pepper. Bake for 10 minutes, or until the edges are crispy.
- Remove the potato skins from the oven and sprinkle each with cheddar cheese and bacon.
- Return the potato skins to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Top each potato skin with a dollop of sour cream and chopped green onions.
- Serve hot and enjoy!
