Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  • Remove the potatoes from the oven and let them cool for 10 minutes.
  • Cut the potatoes in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out potato for another use.
  • Increase the oven temperature to 450°F (230°C).
  • Place the potato skins back on the baking sheet and sprinkle with salt and pepper. Bake for 10 minutes, or until the edges are crispy.
  • Remove the potato skins from the oven and sprinkle each with cheddar cheese and bacon.
  • Return the potato skins to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  • Top each potato skin with a dollop of sour cream and chopped green onions.
  • Serve hot and enjoy!
