Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.

  • Spread half of the hashbrown mixture into the prepared baking dish. Sprinkle with half of the diced onion and 1 cup of shredded cheddar cheese.
  • In another bowl, mix together the sour cream and cream of chicken soup. Spread half of this mixture over the cheese layer.
  • Repeat the layers with the remaining hashbrown mixture, diced onion, cheese, and sour cream mixture.
  • Top the casserole with the cooked and crumbled bacon and chopped chives.
  • Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the casserole is bubbly and the top is golden brown.
  • Allow the casserole to cool for 5-10 minutes before serving. Enjoy!
