Cheesesteak Egg Rolls

Ingredients
- 1 pound of thinly sliced ribeye steak
- 1 tablespoon of vegetable oil
- 1/2 cup of diced onion
- 1/2 cup of diced green bell pepper
- 1/2 cup of diced mushrooms
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 12 egg roll wrappers
- 1 cup of shredded provolone cheese
- Vegetable oil for frying
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add 1 pound of thinly sliced ribeye steak to the skillet and cook until browned, about 3-4 minutes.
- Add 1/2 cup of diced onion, 1/2 cup of diced green bell pepper, and 1/2 cup of diced mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes.
- Season the mixture with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Remove from heat and let it cool slightly.
- Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2-3 tablespoons of the cheesesteak filling onto the center of the wrapper. Sprinkle 1-2 tablespoons of shredded provolone cheese on top of the filling.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.
- In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the egg rolls in batches and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
- Serve the cheesesteak egg rolls hot with your favorite dipping sauce and enjoy!
