Instructions
- In a large bowl, combine 1 pound ground beef, 1/2 pound ground lamb, and 1/2 pound ground pork.
- Add 1 small finely chopped onion, 2 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon baking soda to the meat mixture.
- Pour in 1/4 cup of sparkling water and mix everything together until well combined.
- Cover the bowl with plastic wrap and let the mixture rest in the refrigerator for at least 1 hour to allow the flavors to meld.
- Preheat the grill or a large skillet over medium-high heat.
- Shape the meat mixture into small sausage-shaped portions, about 3 inches long and 1 inch wide.
- Brush the cevapi with 1 tablespoon of vegetable oil to prevent sticking.
- Grill or pan-fry the cevapi for about 5-7 minutes, turning occasionally, until they are browned and cooked through.
- Serve the cevapi hot with flatbread, chopped onions, ajvar (red pepper relish), and sour cream.
