Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 2 tablespoons honey, 1 tablespoon sriracha sauce, 1/4 cup creamy peanut butter, 1 clove minced garlic, 1 teaspoon grated ginger, and 1 tablespoon lime juice to make the spicy peanut sauce.
  • Divide the cooked quinoa among 4 bowls. Top with red bell pepper, shredded carrots, and edamame. Drizzle with the spicy peanut sauce.
