Instructions

  • In a large pot of boiling salted water, cook the cauliflower florets for 5 minutes. Drain and let cool.
  • In a large bowl, combine 1/2 cup of flour, 1/4 cup of grated Parmesan cheese, 2 eggs, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/4 teaspoon of paprika, and salt and pepper to taste.
  • Add the cooled cauliflower florets to the bowl and gently toss to coat the florets with the batter.
  • In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat.
  • Drop spoonfuls of the cauliflower mixture into the skillet and flatten them slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Transfer the fritters to a paper towel-lined plate to drain any excess oil.
  • Serve the cauliflower fritters warm with your favorite dipping sauce and enjoy!
