- 1 cup of cashew butter

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine 1 cup of cashew butter, 1/2 cup of brown sugar, 1 egg, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Mix until well combined.
- Fold in 1/2 cup of chocolate chips into the dough.
- Scoop the dough using a cookie scoop and place them onto the prepared baking sheet, leaving space between each cookie.
- Using a fork, gently press down on each cookie to create a crisscross pattern.
- Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
