Instructions

  • Prepare a baking sheet by lining it with parchment paper or greasing it with butter. Set aside.
  • In a heavy-bottomed saucepan, combine 1 cup of granulated sugar, 1/2 cup of light corn syrup, and 1/4 cup of water. Stir gently to combine.
  • Place the saucepan over medium heat and bring the mixture to a boil, without stirring. Use a candy thermometer to monitor the temperature. Cook until the mixture reaches 290°F (soft-crack stage).
  • Once the mixture reaches 290°F, stir in 1/4 teaspoon of salt and 1 1/2 cups of roughly chopped cashews. Continue to cook, stirring constantly, until the mixture reaches 300°F (hard-crack stage).
  • Remove the saucepan from the heat and quickly stir in 1 tablespoon of unsalted butter, 1 teaspoon of vanilla extract, and 1 teaspoon of baking soda. The mixture will bubble up, so be careful.
  • Immediately pour the hot mixture onto the prepared baking sheet, spreading it out with a spatula into an even layer. Allow it to cool and harden completely.
  • Once the brittle has cooled and hardened, break it into pieces. Store in an airtight container at room temperature.
