Instructions

  • In a small bowl, mix together 1/4 cup brown sugar, 2 tbsp paprika, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp salt, and 1 tbsp black pepper to create a dry rub.
  • Rub the dry rub all over the pork shoulder, covering it completely. Place the pork shoulder in a slow cooker and cook on low for 8 hours, or until the pork is tender and easily pulls apart with a fork.
  • While the pork is cooking, make the barbecue sauce by combining 1 cup apple cider vinegar, 1/2 cup ketchup, 1/4 cup brown sugar, and 2 tbsp yellow mustard in a saucepan. Simmer over low heat for 15-20 minutes, stirring occasionally, until the sauce thickens.
  • Once the pork is done, remove it from the slow cooker and shred it using two forks. Place the shredded pork in a large bowl and pour the barbecue sauce over it, tossing to coat the pork evenly.
  • To assemble the sandwiches, place a generous amount of the pulled pork on the bottom half of each hamburger bun. Top with the other half of the bun and serve hot.
