  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup pico de gallo
  • 1 avocado, sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese

  • 1 cup pico de gallo
  • 1 avocado, sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese

Instructions

  • In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, orange juice, lime juice, cumin, oregano, chili powder, salt, and black pepper. Cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.
  • Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
  • In a serving bowl, divide the cooked rice, black beans, and corn among 4 bowls.
  • Top each bowl with the shredded carnitas, pico de gallo, sliced avocado, shredded lettuce, chopped cilantro, sour cream, and shredded cheese.
  • Serve immediately and enjoy!
