Carnitas Burrito Bowl

Ingredients
- 2 lbs pork shoulder, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 orange, juiced
- 1 lime, juiced
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup pico de gallo
- 1 avocado, sliced
- 1/2 cup shredded lettuce
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup shredded cheese
Instructions
- In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, orange juice, lime juice, cumin, oregano, chili powder, salt, and black pepper. Cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.
- Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
- In a serving bowl, divide the cooked rice, black beans, and corn among 4 bowls.
- Top each bowl with the shredded carnitas, pico de gallo, sliced avocado, shredded lettuce, chopped cilantro, sour cream, and shredded cheese.
- Serve immediately and enjoy!
