- 12 cups of popped popcorn
- 1 cup of granulated sugar
- 1/2 cup of light corn syrup
- 1/2 cup of unsalted butter
- 1/2 teaspoon of salt
- 1/2 teaspoon of vanilla extract
- 1 cup of crushed peanuts
Instructions
- Place the popped popcorn in a large mixing bowl, removing any unpopped kernels. Set aside.
- In a medium saucepan, combine 1 cup of sugar, 1/2 cup of light corn syrup, 1/2 cup of unsalted butter, and 1/2 teaspoon of salt over medium heat. Stir constantly until the mixture comes to a boil.
- Once boiling, continue to stir for 4-5 minutes until the mixture reaches 250°F on a candy thermometer (hard-ball stage).
- Remove the caramel mixture from the heat and stir in 1/2 teaspoon of vanilla extract.
- Pour the caramel over the popped popcorn and gently stir to coat evenly. Add 1 cup of crushed peanuts and mix well.
- Using buttered or greased hands, quickly shape the coated popcorn into 12 balls, pressing firmly to hold their shape. Place the balls on wax paper to cool and set.
- Allow the caramel popcorn balls to cool completely before serving. Enjoy!
