  • In a medium saucepan, combine 1 cup of sugar, 1/2 cup of light corn syrup, 1/2 cup of unsalted butter, and 1/2 teaspoon of salt over medium heat. Stir constantly until the mixture comes to a boil.
  • Once boiling, continue to stir for 4-5 minutes until the mixture reaches 250°F on a candy thermometer (hard-ball stage).
  • Remove the caramel mixture from the heat and stir in 1/2 teaspoon of vanilla extract.
  • Pour the caramel over the popped popcorn and gently stir to coat evenly. Add 1 cup of crushed peanuts and mix well.
  • Using buttered or greased hands, quickly shape the coated popcorn into 12 balls, pressing firmly to hold their shape. Place the balls on wax paper to cool and set.
  • Allow the caramel popcorn balls to cool completely before serving. Enjoy!
