  • Place the popped popcorn in a large bowl, removing any unpopped kernels.
  • In a medium saucepan, combine 1 cup of sugar, 1/2 cup of butter, 1/4 cup of corn syrup, and 1/2 teaspoon of salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Once boiling, continue to cook without stirring for 4-5 minutes, or until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  • Remove the caramel mixture from the heat and quickly stir in 1/4 teaspoon of baking soda and 1 teaspoon of vanilla extract. The mixture will bubble up, so be careful.
  • Pour the hot caramel over the popcorn and quickly stir to coat the popcorn evenly.
  • Using buttered or greased hands, shape the coated popcorn into 12 balls and place them on the prepared baking sheet. Let them cool for a few minutes.
  • In a microwave-safe bowl, melt 1 cup of semi-sweet chocolate chips in 30-second intervals, stirring in between, until smooth.
  • Drizzle the melted chocolate over the caramel popcorn balls using a spoon or a piping bag.
