Ingredients
- 1/2 cup of popcorn kernels
- 1 cup of unsalted butter
- 2 cups of brown sugar
- 1/2 cup of light corn syrup
- 1 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 250 degrees F. Line a large baking sheet with parchment paper.
- Pop the popcorn kernels using your preferred method and place them in a large mixing bowl.
- In a medium saucepan, melt 1 cup of unsalted butter over medium heat.
- Stir in 2 cups of brown sugar, 1/2 cup of light corn syrup, and 1 teaspoon of salt. Bring the mixture to a boil, stirring constantly.
- Once boiling, let the mixture cook without stirring for 4-5 minutes. Remove from heat and stir in 1/2 teaspoon of baking soda and 1 teaspoon of vanilla extract.
- Pour the caramel mixture over the popped popcorn and gently stir to coat evenly.
- Spread the caramel-coated popcorn onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
- Remove from the oven and let the caramel popcorn cool completely before breaking it into pieces and serving.
