Instructions

  • Preheat the oven to 350 degrees F. Grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a large bowl, cream together 1 cup of softened butter and 1/2 cup of granulated sugar until light and fluffy.
  • Add 2 cups of flour and 1/4 teaspoon of salt to the butter mixture, and mix until crumbly.
  • Press the mixture into the bottom of the prepared baking pan to form an even crust.
  • Bake the crust in the preheated oven for 15-18 minutes, or until lightly golden. Remove from the oven and set aside.
  • In a saucepan, combine 1 cup of packed brown sugar and 1/2 cup of heavy cream. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil for 1 minute, then remove from the heat.
  • Stir in 2 cups of pecan halves, then immediately pour the caramel pecan mixture over the baked crust, spreading it evenly with a spatula.
  • Return the pan to the oven and bake for an additional 15-18 minutes, or until the caramel is bubbling and the pecans are lightly toasted.
  • Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan and transfer to a cutting board.
  • Cut into squares or bars and serve. Enjoy!
