Quinoa Cabbage Rolls
Created by: Howcan Team
Ingredients
- 1 head of cabbage
- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup tomato sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of water to a boil. Carefully remove 12 large leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a medium saucepan, combine 1 cup of quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
- In a large skillet, sauté 1 diced onion and 2 minced garlic cloves until softened. Add 1 grated carrot, 1 can of diced tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and salt and pepper to taste. Cook for 5-7 minutes, then stir in the cooked quinoa.
- Place a spoonful of the quinoa mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go. Place the rolls seam-side down in a baking dish.
- Pour 1 cup of tomato sauce over the cabbage rolls, cover the dish with foil, and bake for 30-35 minutes, or until the cabbage is tender.
- Serve the quinoa cabbage rolls hot, garnished with fresh herbs if desired. Enjoy!
Cabbage rolls, also known as golabki, have a rich history dating back to Eastern Europe. Traditionally, this dish consists of cabbage leaves stuffed with a filling of rice, meat, and spices, simmered in a flavorful tomato sauce. However, a modern twist on this classic recipe involves substituting rice with quinoa, adding a nutritious and gluten-free element to the dish. Renowned chefs and restaurants in Poland, Ukraine, and Russia have perfected the art of crafting these delectable cabbage rolls, each adding their unique touch to the recipe. Today, the best versions of this dish can be found in authentic Eastern European eateries, where the key lies in achieving a perfect balance of tender cabbage, savory filling, and tangy tomato sauce. Whether using quinoa or rice, the most important aspect of this dish is the flavorful and well-seasoned filling, which often includes a combination of ground meat, onions, garlic, and herbs. For a unique twist, some chefs also incorporate ingredients like mushrooms or lentils to cater to vegetarian preferences. Whether enjoyed as a comforting home-cooked meal or savored in a traditional restaurant setting, cabbage rolls with quinoa offer a delightful fusion of flavors and textures, making them a beloved dish for food enthusiasts around the world.
