  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced

  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup tomato sauce

Instructions

  • Preheat the oven to 375°F (190°C).
  • Bring a large pot of water to a boil. Carefully remove 12 large leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  • In a medium saucepan, combine 1 cup of quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  • In a large skillet, sauté 1 diced onion and 2 minced garlic cloves until softened. Add 1 grated carrot, 1 can of diced tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and salt and pepper to taste. Cook for 5-7 minutes, then stir in the cooked quinoa.
  • Place a spoonful of the quinoa mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go. Place the rolls seam-side down in a baking dish.
  • Pour 1 cup of tomato sauce over the cabbage rolls, cover the dish with foil, and bake for 30-35 minutes, or until the cabbage is tender.
  • Serve the quinoa cabbage rolls hot, garnished with fresh herbs if desired. Enjoy!
