Ingredients
- 4 bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter, softened
- 2 tablespoons chopped fresh parsley
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup lemon juice, minced garlic, dried oregano, dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to create the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the oven to 400°F (200°C).
- Remove the chicken from the marinade and place them on a baking sheet lined with parchment paper. Discard the remaining marinade.
- In a small bowl, mix together the softened butter and chopped parsley to create the herb butter.
