Ingredients
- 1 cup of white rice
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup of salsa
- 1/4 cup of sour cream
- 1 lime, cut into wedges
- 1/4 cup of chopped cilantro
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Cook 1 cup of white rice according to package instructions.
- In a small saucepan, heat the black beans over medium heat until warmed through.
- In a separate skillet, heat the corn kernels and diced red bell pepper over medium heat for 5-7 minutes, or until the vegetables are tender.
- In a small bowl, mix together 1 teaspoon of cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top each bowl with the warmed black beans, sautéed corn and red bell pepper, sliced avocado, salsa, and sour cream.
- Sprinkle each bowl with the spice mixture and garnish with chopped cilantro. Serve with lime wedges on the side.
