Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/2 cup buffalo sauce
- 4 slices of bread
- 4 slices of cheddar cheese
- 1/4 cup blue cheese dressing
- 2 tablespoons butter
Instructions
- In a bowl, mix the shredded chicken with the buffalo sauce until well coated.
- Spread the blue cheese dressing on two slices of bread.
- Divide the buffalo chicken mixture evenly between the two slices of bread, spreading it out in an even layer.
- Place two slices of cheddar cheese on top of the buffalo chicken mixture on each slice of bread.
- Top each sandwich with the remaining slices of bread to form two sandwiches.
- In a skillet, melt 1 tablespoon of butter over medium heat.
- Place one sandwich in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Repeat with the remaining sandwich, adding the remaining tablespoon of butter to the skillet before cooking.
- Slice the sandwiches in half and serve hot.
