Ingredients
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 12 egg roll wrappers
- 1/4 cup blue cheese dressing
- Vegetable oil for frying
Instructions
- In a large bowl, mix 2 cups of shredded cooked chicken with 1/2 cup of buffalo sauce until well coated.
- Add 1 cup of shredded cabbage, 1/2 cup of shredded carrots, and 1/4 cup of chopped green onions to the chicken mixture and toss to combine.
- Place an egg roll wrapper on a clean, dry surface with one corner pointing towards you. Spoon about 1/4 cup of the chicken filling onto the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.
- In a large, deep skillet, heat 2 inches of vegetable oil to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
- Serve the buffalo chicken egg rolls with blue cheese dressing for dipping. Enjoy!
