  • Mix the ingredients together until well combined.
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the potato and vegetable mixture to the skillet, spreading it out evenly. Press down with a spatula to form a cake.
  • Cook for 10-12 minutes, or until the bottom is golden and crispy. Use a spatula to flip the bubble and squeak over and cook for an additional 8-10 minutes, or until the other side is golden and crispy.
  • Transfer the bubble and squeak to a serving plate and cut into wedges. Serve hot as a side dish or with a fried egg on top for a delicious main course.
