Ingredients
- 2 cups of mashed potatoes
- 1 cup of cooked cabbage, chopped
- 1/2 cup of cooked carrots, diced
- 1/4 cup of onion, finely chopped
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine 2 cups of mashed potatoes, 1 cup of cooked cabbage, 1/2 cup of cooked carrots, and 1/4 cup of finely chopped onion. Season with salt and pepper to taste.
- Mix the ingredients together until well combined.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add the potato and vegetable mixture to the skillet, spreading it out evenly. Press down with a spatula to form a cake.
- Cook for 10-12 minutes, or until the bottom is golden and crispy. Use a spatula to flip the bubble and squeak over and cook for an additional 8-10 minutes, or until the other side is golden and crispy.
- Transfer the bubble and squeak to a serving plate and cut into wedges. Serve hot as a side dish or with a fried egg on top for a delicious main course.
