Instructions

  • In a large pot, brown the chicken thighs and pork shoulder over medium heat for 5 minutes.
  • Add the diced onion, celery, carrots, and garlic to the pot and cook for another 5 minutes until the vegetables are softened.
  • Stir in the diced tomatoes, corn, lima beans, potatoes, chicken broth, ketchup, Worcestershire sauce, hot sauce, smoked paprika, black pepper, and salt.
  • Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 hours, stirring occasionally.
  • Remove the chicken thighs from the pot, shred the meat, and discard the bones. Return the shredded chicken to the pot and stir to combine.
  • Simmer for an additional 15 minutes to allow the flavors to meld together.
  • Serve hot and enjoy!
