Ingredients
- 1 lb of chicken thighs, bone-in
- 1 lb of pork shoulder, cubed
- 1/2 cup of diced onion
- 1/2 cup of diced celery
- 1/2 cup of diced carrots
- 2 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 1 cup of corn kernels
- 1 cup of lima beans
- 1 cup of diced potatoes
- 4 cups of chicken broth
- 1/4 cup of ketchup
- 2 tablespoons of Worcestershire sauce
- 1 tablespoon of hot sauce
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of black pepper
- Salt to taste
Instructions
- In a large pot, brown the chicken thighs and pork shoulder over medium heat for 5 minutes.
- Add the diced onion, celery, carrots, and garlic to the pot and cook for another 5 minutes until the vegetables are softened.
- Stir in the diced tomatoes, corn, lima beans, potatoes, chicken broth, ketchup, Worcestershire sauce, hot sauce, smoked paprika, black pepper, and salt.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 hours, stirring occasionally.
- Remove the chicken thighs from the pot, shred the meat, and discard the bones. Return the shredded chicken to the pot and stir to combine.
- Simmer for an additional 15 minutes to allow the flavors to meld together.
- Serve hot and enjoy!
