Broccoli and Tofu Stir-Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced onion, minced garlic, and minced ginger. Stir-fry for 2-3 minutes until fragrant.
- Add the broccoli florets and sliced red bell pepper to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked tofu to the skillet and pour the sauce over the tofu and vegetables. Stir well to coat everything in the sauce.
- Cook for an additional 2-3 minutes until the sauce has thickened and everything is heated through.
- Season with salt and pepper to taste.
- Serve the broccoli and tofu stir-fry over cooked rice and enjoy!
