  • Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with a quarter of the diced apple and brie slices, pressing the edges of the chicken together to seal the filling inside.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat.
  • Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, until golden brown.
  • Pour the chicken broth into the skillet and sprinkle the thyme leaves over the chicken.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Serve the stuffed chicken breasts with any pan juices spooned over the top. Enjoy!
