  • 1 small onion, diced
  • 1 bell pepper, diced
  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Salsa, for serving
  • Sour cream, for serving

Instructions

  • In a large skillet, cook 8 ounces of turkey sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
  • In a bowl, whisk together 8 large eggs, 1/4 cup of milk, salt, and pepper. Pour the egg mixture into the skillet with the cooked vegetables. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
  • Divide the cooked turkey sausage and scrambled eggs among the 4 large flour tortillas. Sprinkle each with 1/4 cup of shredded cheddar cheese.
  • Fold in the sides of each tortilla, then roll up tightly to form a burrito.
  • If serving immediately, heat a clean skillet over medium heat and place the burritos seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
  • Serve the breakfast burritos with salsa and sour cream on the side.
  • If not serving immediately, wrap each burrito in aluminum foil and store in the refrigerator. To reheat, place the foil-wrapped burritos in a 350°F oven for 10-15 minutes until heated through.
