Brazilian Feijoada

Ingredients
- 1 pound dried black beans
- 1/2 pound pork shoulder, cut into chunks
- 1/2 pound smoked sausage, sliced
- 1/2 pound bacon, chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 3 cups water
Instructions
- Rinse the black beans and soak them in water overnight.
- In a large pot, combine the soaked black beans, pork shoulder, smoked sausage, bacon, onion, garlic, bay leaves, oregano, cumin, salt, and pepper.
- Add 3 cups of water to the pot and bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 2-3 hours, or until the beans are tender and the meats are cooked through, stirring occasionally.
- Remove the bay leaves and adjust the seasoning if necessary.
- Serve the feijoada hot with white rice, collard greens, and orange slices on the side.
