Instructions

  • Rinse the black beans and soak them in water overnight.
  • In a large pot, combine the soaked black beans, pork shoulder, smoked sausage, bacon, onion, garlic, bay leaves, oregano, cumin, salt, and pepper.
  • Add 3 cups of water to the pot and bring to a boil over high heat.
  • Reduce the heat to low, cover, and simmer for 2-3 hours, or until the beans are tender and the meats are cooked through, stirring occasionally.
  • Remove the bay leaves and adjust the seasoning if necessary.
  • Serve the feijoada hot with white rice, collard greens, and orange slices on the side.
