Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons tomato paste
- 1 tablespoon curry powder
- 1 teaspoon five-spice powder
- 1 tablespoon sugar
- 3 cups beef broth
- 1 cup coconut water
- 2 carrots, peeled and cut into chunks
- 2 potatoes, peeled and cut into chunks
- 3-4 star anise
- 3-4 bay leaves
- Fish sauce, to taste
- Salt and pepper, to taste
- Fresh cilantro and Thai basil, for garnish
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and minced ginger. Cook until fragrant, about 2 minutes.
- Add the beef cubes and brown on all sides, about 5 minutes.
- Stir in the tomato paste, curry powder, five-spice powder, and sugar. Cook for another 2 minutes.
- Pour in the beef broth and coconut water. Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
- Add the carrots, potatoes, star anise, and bay leaves. Continue to simmer for another 45-60 minutes, or until the beef is tender and the vegetables are cooked through.
- Season with fish sauce, salt, and pepper to taste.
- Serve the Bo Kho hot, garnished with fresh cilantro and Thai basil, and enjoy with a side of crusty bread or rice.
