  • Stir in the tomato paste, curry powder, five-spice powder, and sugar. Cook for another 2 minutes.
  • Pour in the beef broth and coconut water. Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Add the carrots, potatoes, star anise, and bay leaves. Continue to simmer for another 45-60 minutes, or until the beef is tender and the vegetables are cooked through.
  • Season with fish sauce, salt, and pepper to taste.
  • Serve the Bo Kho hot, garnished with fresh cilantro and Thai basil, and enjoy with a side of crusty bread or rice.
