Ingredients
- 1 cup of oats
- 1 cup of all-purpose flour

- 1/2 cup of blueberries
- 1 ripe banana, sliced
Instructions
- In a blender, pulse 1 cup of oats until finely ground.
- In a large bowl, combine the ground oats, 1 cup of all-purpose flour, 2 tablespoons of brown sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 1 1/4 cups of milk, 1 egg, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in 1/2 cup of blueberries and the sliced banana.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, greasing the skillet as needed.
