Ingredients
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- For the blueberry filling:
- 2 cups fresh or frozen blueberries
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1/4 cup water
- For the crumble topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted butter. Press the mixture into the bottom of the prepared pan. Set aside.
- In a large bowl, beat 24 oz softened cream cheese, 1 cup granulated sugar, and 1 tsp vanilla extract until smooth. Add 4 eggs, one at a time, beating well after each addition. Stir in 1 cup sour cream. Pour the filling over the crust in the pan.
- In a small saucepan, combine 2 cups blueberries, 1/4 cup granulated sugar, 1 tbsp cornstarch, and 1/4 cup water. Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries burst. Remove from heat and let it cool slightly. Spoon the blueberry filling over the cheesecake filling in the pan.
- In a small bowl, mix 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, and 1/2 tsp ground cinnamon. Stir in 1/4 cup melted butter until the mixture is crumbly. Sprinkle the crumble topping over the blueberry filling.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours, or overnight, before removing the sides of the pan. Slice and serve chilled. Enjoy!
