Instructions

  • In a medium saucepan, heat 1/2 cup of heavy cream over medium heat until it just begins to simmer.
  • Place 12 oz of semi-sweet chocolate chips in a heatproof bowl.
  • Pour the hot cream over the chocolate chips and let it sit for 1-2 minutes to soften the chocolate.
  • Gently stir the chocolate and cream mixture until smooth and well combined.
  • Stir in 1 tsp of vanilla extract until fully incorporated.
  • Cover the bowl with plastic wrap and refrigerate for 2 hours, or until the mixture is firm enough to handle.
  • Using a small cookie scoop or a spoon, scoop out small portions of the chocolate mixture and roll them into 1-inch balls.
  • Place the truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
  • Once the truffles are firm, roll them in 1/4 cup of unsweetened cocoa powder until evenly coated.
