Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of blackening seasoning
- 2 tablespoons of olive oil
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and minced
- 1/4 cup of fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a medium bowl, toss the shrimp with 2 tablespoons of blackening seasoning until evenly coated.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are blackened and cooked through. Remove from heat and set aside.
- In a separate bowl, combine the diced mangoes, chopped red onion, minced jalapeno, chopped cilantro, and lime juice. Season with salt and pepper to taste, and stir to combine.
