Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons blackening seasoning
- 2 tablespoons olive oil
- 8 small flour tortillas
- 2 cups shredded cabbage
- 1 avocado, sliced
- 1 lime, cut into wedges
- For the mango salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a medium bowl, toss the shrimp with 2 tablespoons of blackening seasoning until evenly coated.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until they are blackened and opaque. Remove from heat and set aside.
- In a separate bowl, combine the diced mango, finely chopped red onion, chopped cilantro, seeded and finely chopped jalapeno, and 2 tablespoons of lime juice. Season with salt and pepper to taste. Mix well to combine and set aside.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, divide the shredded cabbage evenly among the tortillas. Top with the blackened shrimp, avocado slices, and a spoonful of mango salsa. Serve with lime wedges on the side.
