  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 8 small flour tortillas
  • 2 cups shredded cabbage
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • For the mango salsa:
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  • In a medium bowl, toss the shrimp with 2 tablespoons of blackening seasoning until evenly coated.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until they are blackened and opaque. Remove from heat and set aside.
  • In a separate bowl, combine the diced mango, finely chopped red onion, chopped cilantro, seeded and finely chopped jalapeno, and 2 tablespoons of lime juice. Season with salt and pepper to taste. Mix well to combine and set aside.
  • Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  • To assemble the tacos, divide the shredded cabbage evenly among the tortillas. Top with the blackened shrimp, avocado slices, and a spoonful of mango salsa. Serve with lime wedges on the side.
