Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons blackening seasoning
- 2 tablespoons olive oil
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- For the mango salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a medium bowl, toss the shrimp with 2 tablespoons of blackening seasoning until evenly coated.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until they are blackened and opaque. Remove from heat and set aside.
- In a separate bowl, combine the diced mango, finely chopped red onion, seeded and finely chopped jalapeno, chopped cilantro, and lime juice. Season with salt and pepper to taste. Mix well to combine.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, divide the shredded lettuce among the warm tortillas. Top with the blackened shrimp, sliced avocado, and a spoonful of mango salsa. Garnish with additional cilantro and serve with lime wedges on the side.
