Instructions

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, mix 2 cups of Oreo cookie crumbs with 1/4 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan. Set aside.
  • In a large bowl, beat 24 ounces of softened cream cheese, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth.
  • Add 4 large eggs, one at a time, mixing well after each addition. Stir in 1/2 cup of sour cream.
  • Pour half of the cream cheese mixture over the Oreo crust. Spoon 1/2 cup of blackberry jam over the cream cheese layer and swirl with a knife to create a marbled effect.
  • Carefully pour the remaining cream cheese mixture over the blackberry layer.
  • Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Remove from the oven and run a knife around the edges of the pan to loosen the cheesecake. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, top the cheesecake with fresh blackberries and additional Oreo crumbs if desired. Enjoy!
