Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1 avocado, sliced
- 4 burger buns
- 1/4 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon olive oil
Instructions
- In a large bowl, mash 1 cup of the black beans with a fork or potato masher.
- Add the remaining black beans, bread crumbs, red onion, red bell pepper, cilantro, cumin, chili powder, and salt to the bowl. Mix until well combined.
- Divide the mixture into 4 equal portions and shape into burger patties.
- Heat the olive oil in a skillet over medium heat. Cook the burger patties for 4-5 minutes on each side, or until golden brown and heated through.
- In a small bowl, mix the mayonnaise, chipotle peppers, and lime juice to make the chipotle mayo.
- Toast the burger buns in a toaster or on a skillet until lightly golden.
- To assemble the burgers, spread a generous amount of chipotle mayo on the bottom half of each bun. Place a black bean patty on top, followed by a few slices of avocado. Top with the other half of the bun.
