  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 4 burger buns
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil

Instructions

  • In a large bowl, mash 1 cup of the black beans with a fork or potato masher.
  • Add the remaining black beans, bread crumbs, red onion, red bell pepper, cilantro, cumin, chili powder, and salt to the bowl. Mix until well combined.
  • Divide the mixture into 4 equal portions and shape into burger patties.
  • Heat the olive oil in a skillet over medium heat. Cook the burger patties for 4-5 minutes on each side, or until golden brown and heated through.
  • In a small bowl, mix the mayonnaise, chipotle peppers, and lime juice to make the chipotle mayo.
  • Toast the burger buns in a toaster or on a skillet until lightly golden.
  • To assemble the burgers, spread a generous amount of chipotle mayo on the bottom half of each bun. Place a black bean patty on top, followed by a few slices of avocado. Top with the other half of the bun.
