Instructions

  • Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream together 1 cup of butter and 1 1/2 cups of granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in 1 tablespoon of vanilla extract.
  • Combine 2 1/4 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt; gradually mix into the creamed mixture alternately with 1 cup of milk until just blended.
  • Pour the batter evenly into the prepared pans.
  • Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
  • To make the frosting, in a large bowl, cream 1 cup of butter with 3 cups of powdered sugar until smooth. Mix in 2 teaspoons of vanilla extract and 2-3 tablespoons of heavy cream until the frosting is smooth and spreadable. Add food coloring if desired.
  • Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, then place the second cake layer on top. Use the remaining frosting to cover the top and sides of the cake.
