Caramelized Sugar Biko

Ingredients
- 2 cups glutinous rice
- 1 1/2 cups water
- 1 1/2 cups coconut milk
- 1 cup brown sugar
- 1/2 teaspoon salt
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Drain well.
- In a rice cooker, combine the rinsed glutinous rice and 1 1/2 cups of water. Cook the rice according to the rice cooker instructions.
- In a separate pot, combine the coconut milk, brown sugar, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes to a golden brown color. This should take about 15-20 minutes. Set aside.
- Once the glutinous rice is cooked, transfer it to a greased baking dish and flatten it with a spatula.
- Pour the caramelized coconut milk mixture over the cooked glutinous rice, spreading it evenly to cover the entire surface.
- Preheat the oven to 350°F (175°C).
- Bake the biko in the preheated oven for 20-25 minutes, or until the coconut milk topping is set and the edges start to caramelize.
- Remove from the oven and let it cool for at least 30 minutes before slicing and serving.
