Ingredients
- 2 cups glutinous rice
- 1 1/2 cups water
- 1 1/2 cups coconut milk
- 1 cup brown sugar
- 1/2 teaspoon salt
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Drain well.
- In a rice cooker, combine the rinsed glutinous rice and 1 1/2 cups of water. Cook the rice according to the rice cooker instructions.
- In a separate pot, combine the coconut milk, brown sugar, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes to a golden brown color. This should take about 15-20 minutes. Set aside.
- Once the glutinous rice is cooked, transfer it to a greased baking dish and flatten it with a spatula.
- Pour the caramelized coconut milk mixture over the cooked glutinous rice, spreading it evenly to cover the entire surface.
- Preheat the oven to 350°F (175°C).
- Bake the biko in the preheated oven for 20-25 minutes, or until the coconut milk topping is set and the edges start to caramelize.
- Remove from the oven and let it cool for at least 30 minutes before slicing and serving.
- Enjoy your delicious caramelized sugar biko!
Biko, a traditional Filipino dessert, is a sweet sticky rice cake infused with coconut milk and topped with a luscious layer of caramelized sugar. This delectable treat has a rich history dating back to pre-colonial Philippines, where it was often served during special occasions and celebrations. Today, Biko can be found in many Filipino households and restaurants, with each chef adding their own unique twist to the recipe. The best versions of Biko can be found in the Philippines, particularly in regions known for their coconut production, such as Quezon and Bicol. The key to a perfect Biko lies in achieving the ideal balance of sweetness and creaminess, and mastering the art of caramelizing the sugar to create that irresistible topping. Some chefs also incorporate flavors like pandan or jackfruit to elevate the dish even further. Whether enjoyed as a snack or a dessert, Biko with a caramelized sugar topping is a true Filipino delight that continues to captivate taste buds around the world.
