Created by: Howcan Team

Ingredients

  • 2 cups glutinous rice
  • 2 1/2 cups water
  • 1 1/2 cups brown sugar
  • 2 cups coconut milk
  • 1/2 teaspoon salt

Instructions

  • Rinse the glutinous rice under cold water until the water runs clear. Drain well.
  • In a rice cooker, combine the rinsed glutinous rice and 2 1/2 cups of water. Cook the rice according to the rice cooker instructions until it is tender and sticky.
  • In a separate pan, combine the brown sugar and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes. This should take about 15-20 minutes.
  • Once the rice is cooked, transfer it to a large pan or dish. Flatten and smooth the rice using a spatula.
  • Pour the caramelized coconut milk mixture over the cooked rice, spreading it evenly to cover the entire surface.
  • Place the pan or dish in a preheated oven at 350°F (175°C) and bake for 20-30 minutes, or until the top is golden brown and the edges are slightly crispy.
  • Allow the biko to cool before slicing and serving. Enjoy!
Dessert
Filipino

Biko is a traditional Filipino dessert made from glutinous rice, coconut milk, and brown sugar. This sweet and sticky rice cake is often served during special occasions and celebrations in the Philippines. The dish has its roots in pre-colonial Philippines and has evolved over time to become a beloved part of Filipino cuisine. Biko is typically cooked slowly to achieve a caramelized top and a rich, creamy texture. Some variations include adding toppings such as latik (toasted coconut curds) or even jackfruit. In the Philippines, biko is commonly found in local bakeries, dessert shops, and served at family gatherings. The best versions of biko can be found in traditional Filipino restaurants or at local food markets. The key to a delicious biko lies in the quality of the ingredients, particularly the coconut milk and brown sugar, which impart a rich and indulgent flavor. For those looking to make biko at home, it's important to achieve the perfect balance of sweetness and creaminess, and to pay attention to the caramelization process for that signature golden-brown top.
