Ingredients
- 2 cups glutinous rice
- 2 1/2 cups water
- 1 1/2 cups brown sugar
- 2 cups coconut milk
- 1/2 teaspoon salt
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Drain well.
- In a rice cooker, combine the rinsed glutinous rice and 2 1/2 cups of water. Cook the rice according to the rice cooker instructions until it is tender and sticky.
- In a separate pan, combine the brown sugar and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes. This should take about 15-20 minutes.
- Once the rice is cooked, transfer it to a large pan or dish. Flatten and smooth the rice using a spatula.
- Pour the caramelized coconut milk mixture over the cooked rice, spreading it evenly to cover the entire surface.
- Place the pan or dish in a preheated oven at 350°F (175°C) and bake for 20-30 minutes, or until the top is golden brown and the edges are slightly crispy.
