  • 2 bay leaves
  • 4 cloves garlic, smashed
  • 1 small onion, sliced

Instructions

  • In a large pot, combine the apple cider vinegar, water, sugar, salt, black peppercorns, mustard seeds, red pepper flakes, bay leaves, garlic, and onion. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  • Add the turkey gizzards to the pot and simmer for 1.5 to 2 hours, or until the gizzards are tender.
  • Remove the pot from the heat and let the gizzards cool in the pickling liquid.
  • Once cooled, transfer the gizzards and pickling liquid to a large glass jar or airtight container. Refrigerate for at least 24 hours before serving.
  • Serve the pickled turkey gizzards as a snack or use them in salads and sandwiches. Enjoy!
