Ingredients
- 2 lbs turkey gizzards
- 1 cup apple cider vinegar
- 1 cup water
- 1/4 cup sugar
- 1 tbsp salt
- 1 tsp black peppercorns
- 1 tsp mustard seeds
- 1/2 tsp red pepper flakes
- 2 bay leaves
- 4 cloves garlic, smashed
- 1 small onion, sliced
Instructions
- In a large pot, combine the apple cider vinegar, water, sugar, salt, black peppercorns, mustard seeds, red pepper flakes, bay leaves, garlic, and onion. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- Add the turkey gizzards to the pot and simmer for 1.5 to 2 hours, or until the gizzards are tender.
- Remove the pot from the heat and let the gizzards cool in the pickling liquid.
- Once cooled, transfer the gizzards and pickling liquid to a large glass jar or airtight container. Refrigerate for at least 24 hours before serving.
- Serve the pickled turkey gizzards as a snack or use them in salads and sandwiches. Enjoy!
